Can Raw Veggies Be Better Than Cooked?

Many people wonder about this. Is food better raw or heated?

Food regimes are really important and we must know more about preparing. Heat makes meat softer otherwise uncooked is not really healthy or good for the teeth either. Many people are pro such cooking and preparing, but it looks like raw meat and veggies are not always good.

A 2007 research of the British Journal of Nutrition claimed that people on raw food diets have normal vitamin A and beta carotene but they have deficit in lycopene which is a great antioxidant.

Lycopene is a pigment in many fruits and veggies like tomatoes, watermelon, pink guava, bell pepper and papaya. Previous studies claimed that too much lycopene ingestion lowers illnesses like heart problems and cancer. It can be even better than the vitamin C.

A 2002 study said that cooked tomatoes have the most lycopene. This is because the heat dissolves the walls in the veggie and the body gets its nutrients better. Other such veggies are mushrooms, carrots, spinach, cabbage, peppers, asparagus and more. These are best boiled or steamed. This antioxidant and similar others are best gotten from steaming, boiling or baking.


The frying of food has free radicals not healthy for us. They also make chronic issues like inflammation, heart problems, cataract too. The antioxidants keep cells healthy and stop damage to cells.

But, when cooked some veggies lose the vitamin C and this vitamin is easily degraded with oxidation when cooked. But, this trade might be even better since you can get the vitamin C in other fresh produce.

Also, some veggies are better cooked, some raw. Broccoli is better raw since it has all the enzymes that way. This topic is yet to be studied more. However, cooking makes food tastier we can be sure of that.
